Vans Authentics are a perennial favorite, and the Kickdown version levels the whole shoe up. That contrast heel stitch is built into the look of the shoe, but it's also where the shoe collapses for easy putting on. Our only gripe is that Vans isn't making enough of the shoes (hype cycle be damned), so these often sell out in our preferred colors. The On Cloudnova 2 is beloved for it's soft knit upper, breathable fabric, and perfectly supportive midsole. This version is even better, with a slightly softer heel made to bend as you stick your foot into the shoe. They are lightweight and basically a perfect walking shoe.
We just had to include these Nike Go FlyEases, because the shoe played a role in opening the shoe world of adaptive fashion. While this unisex style does not have a collapsible heel, exactly—it's instead a bascule bridge, opening down the middle for putting your foot in—we had to include it on the list.

Arc'teryx's Kragg shoes are another great outdoorsy option but in a slip-on style. Slip-ons are admittedly easier to design with a collapsible heel, but these are collapsible like no other. The heels are a stretchy but high-quality knit, made easy to move about with a loopy pull tab.
